So it’s late afternoon and you’re hankering for a tasty snack that isn't too harsh on your macros… or maybe you’ve just wrapped your work out and NEED something NOW; well this is the recipe for you!
Introducing these scrumptious Savoury Vegetable Muffins by long-time Method client Lauren; this recipe makes you approximately 12 servings so there’s enough for you to share with the crew or meal prep for as snacks all week long.

  • 13g carbs
  • 7g protein
  • 6g fat


Here’s what you’ll need:

  1. 230g zucchini grated
  2. 205g carrots grated
  3. 125g frozen peas & corn
  4. 75g grated cheese (we used Bega light tasty)
  5. 125ml milk
  6. 105g greek yogurt
  7. 35ml olive oil
  8. 3 eggs
  9. 3tsp baking powder
  10. 160g wholemeal plain flour


Now here’s the best part… they’re so simple and easy to make:

  1. Preheat the oven to 180 & line a muffin tray.
  2. Combine all ingredients in a bowl.
  3. Fill muffin papers.
  4. Bake for 30mins or until cooked through.
